The usual pile of school work and avalanche of midterms have kept me from updating! A couple of weeks ago I made an Apple Pastry Bar from the recipe in my Better Homes and Gardens cookbook. Since the apple pie I made the week before was such a hit I had high hopes for this. Although tasty, my little apartment couldn't eat it fast enough and it ended up going bad before we finished it.

8 cups of apples! 

Helen is my dear friend and apartment mate who has now spent two Sundays helping me slice apples. She's the best. 

We were pretty skeptical of all corn flakes, but decided to forge on and start piling on apples.

The finished product. A giant apple pie pop-tart. Despite its ridiculous appearance and the astounding amount of corn flakes, it was yummy! 

Making this recipe used up the rest of my apples from home so I'll have to look for a new recipe to make sans- apples. I'd really like to make my own birthday cake for my upcoming 21st birthday party, any suggestions?

Genetics problems and Greek translations have kept me from updating my blog.

I went home on January 29th and my parents sent me back to school with more apples than my apartment could eat. Instead of letting them rot I decided to try my hand at baking an apple pie. Judging by how quickly we ate it I'd say it was a success!

It didn't turn out as well as my mom's but I'm hoping I'll get better with practice. But for my first pie ever I'm pleased! The next recipe I plan to make is one for apple pastry bars - hopefully I can find the time to bake again soon!

Despite having a genetics problem set due the next day I spent Thursday night baking cupcakes with my dear friend and fellow cupcake lover, Allison. We made chocolate cupcakes with mint marshmallow frosting as well as vanilla cupcakes with lime filling and frosting. It took a bit longer than expected to make both recipes, (we were baking until 12:30!) but both batches ended up tasting delicious!

Hopefully I'll find time to bake some other treats sometime soon! I got a new cookbook for Christmas from my Mom and I've marked about 20 desserts I want to make!

My best friend from home came this week-end and we spent the day exploring D.C. Our first stop was the Newseum, despite the steep admission cost it was a wonderful museum. We spent the morning happily wandering through the exhibits before posing on the observation deck.
After grabbing a quick lunch with an old college friend of Liz's we hopped on the metro to go to the National Cathedral. We got off the metro a stop early and took a (uphill) walk on Cathedral Avenue which weaves through a perfect D.C. neighborhood. Once we got to the cathedral Liz and I couldn't put our cameras down.

Since the cathedral was almost closing for the day Liz and I were able to take tons of shots without a ton of people in them. This is my favorite one I took of the inside of the church.
This picture reminds me of my Dad whose love of flags (and stained glass) is unmatched.
We came. We saw. We took a self timer photo.

We then headed back to Federal Triangle and grabbed a cup of coffee and took a evening stroll on the National Mall on our way back to the car. This is the last picture of a wonderful day spent in DC with my favorite traveling companion.
